At a guess it's running rich/there's not enough air in the mixture.
Excessive hydrocarbon would be an incomplete burn, it's sootier than expected.

You'd probably work through the combustion related items i.e. air filter, plugs, maf and lambda sensors to see if any are knackered or faulty more than one reason could be causing it.
Hell Italian tune up on super unleaded might be good enough to get it past the MOT.
Does it burn oil at all? Other things that come to mind are maybe run fuel injector cleaner through it if it's freshly serviced and has no obvious running issues and doesn't burn oil.

Hydrocarbons in the exhaust are as Steven said above unburnt fuel. It can also be oil getting into the exhaust via the cylinders but that would be unusual.
As pointed out though, if you have hydrocarbons in the exhaust then its likely you have incomplete combustion, This isn't really effected by the cat, so its more likely to be a fueling or air intake issue.

Good to know, thanks for the info! Cats are expensive and difficult to fit on an old GP. It's more likely a sensor then.
