Ive removed and installed a new sump but the last screw didnt tighten and has de threaded the hole!! what can i do?

Helicoil the thread. Local engineers merchant will have them. Or you may find someone willing to come out and do it ( -- bike shops deal with more stripped threads than most!)
buy/hire/borrow a tap and die set; cut a new thread and fit the next size bolt up
How tight should the sump bolts be?
Should be in the guides, either here or in the Cinq/Sei section.
