It's just had a service so I doubt the clutch is beginning to go

Not sure that makes any sense! Could very easily be the clutch. Not saying it is. Just stating that a recent service would not have any influence over clutch function.
I believe the 500 has a hydraulic clutch. Does sound like your clutch may be fooked. How many miles on the clock?

Clutch bite point is very much an individual issue.....some people swear that it should be approximately 1/2 way between floor and full travel, others lower down and so on and so forth etc.....Your driving style will have an effect too....
Do you rest your foot on the clutch? If you do there's pressure of some kind on it and it WILL wear more quickly, possibly imperceptibly but more quickly all the same and over a lot of miles it'll build....and don't believe the BS from some people that it won't !!
 
The dealer actually told me that it does bite high, and I have found it to be so compared to my old Clio.

Doesn't need a lot of revs to get going, although Mine is a TA, so that might be it.
