What happens if you take your battery off your 1997 cinq and you've not got your red key????[!]

Had my battery off for the best part of 2 days when I did my engine swap, had no bother starting it back up with the blue one.

Why do we have a red key ????[?]

You need it to reprogram new blue keys, although these can be cloned by third parties. If you lose your blue keys you won't be able to start the car unless you visit Fiat or a specialist for a serious wallet weight reducing plan.
