I have a 2011 Fiat Doblo 1.6 Diesel (7 seater MPV - or GTV Grandchildren Transport Vehicle) which the grandkids call Dobbie.

If I shut the drivers side front door (all other doors closed) with the keys in the ignition (off position), sometimes Dobbie locks all the doors and the only way to open the doors is to use a spare set of keys.

Can anybody offer any ideas.

Not a problem I have had with any of my Doblos, however I had that issue on a 2012 Citroen C3 Picasso and it was the drivers door lock. I tested it unplugged but in the end a second hand door lock fixed the problem.:)
 
My Bravo was a bit odd. Occasionally it would unlock or open open a rear window. Get a keep-a-key and hide a spare underneath somewhere!
I am quite impressed with an old Skoda Scout I bought for £700 several years ago, a few times I have left a window or the sunroof open, then realised it had rained , gone to the car and found it had shut all it windows and the sun roof.
It makes a pleasant change from one of the big people carriers a few years ago that people would come to them in the morning after locking them securely only to find the side sliding doors wide open.:)

You wait it WILL lock the keys inside one day. Our Seat lasted 10 years before it did this to us. Its quite a sensible arrangement in general. It shouldnt lock if the keys are inside the car but when the lock microswitches get worn enough it can. Pandas dont lock their keys inside and are best.
 
I've never seen such a problem, but I'd check the settings in MultiEcuScan. The Ducato has a couple of options of auto locking and I think also testing.
Some cars have reset functions and procedures but I never found out with the Bravo. It only got wet once!

Body computer will not lock the car itself. It will also not lock the car unles all doors are shut.
Once inside, and all doors shut, locking the front door, using the inner door handle, will lock all doors. There is the area that is causing this problem. Once shut, the door handle is dropping enough that the switch in the lock is sensing a lock position, and triggeriing locking the whole car. The door handle may have sufferred wear, and is now loose, or the connecting rod inside may be worn, or the link clips may now be missing a plstic ferrule, allowing excess movement.
Time to get the door panel off and see what is slack inside the driver's door.

My 2011 Ducato, my 2003 non-FIAT daily and my GF's 2006 non-FIAT daily do lock the doors when driving away. It's a function that can be enabled / disabled via the appropriate software (MES for the FIAT) and via pressing a combination of buttons inside. Or could be also the dashboard menu in the FIAT. I think it was the same was with the 2001 Skoda and 2004 Ford.

I've just reread the initial post and one idea came to my mind:

Central locking is ment to lock the car if it has been unlocked and any door have not been opened since. Just to prevent accidental unlocking with the remote.

It could be that the car is not aware that the driver's door has been opened. The car is not aware that the key has been inserted into the ignition barrel if it has not been turned, as the OP says it is still in OFF position when the locks lock.

I think that the cab light is using the same sensor (probably in the door lock), so it would be worth checking if the cab light is on or off when the locks lock again. The cab light switch has 3 positions: off, on when doors are opened, constantly on. Must be in the middle one.
 
Many things can cause this but it may be worth just taking off the door car on drivers door and simply unplugging the wires to that lock to test it.
That is what it was on my old 2012 Citroen C3 Picasso, but it had done over 220k miles as a minicab.;)

On my Fiat Doblo there is a function which locks the doors once the car is moving, this was switched off.
