Assuming you're in the uk removing the airbag would result in an automatic mot fail now, obviously you'll be able to find pictures of cars with different steering wheels however these predate the rule changes

I believe that the MOT now states that all standard equipment must be present and working which means the Steering wheel must have an air bag if it left the factory with one. Not sure from what year.
The light not working isn't a fail, only an advisory - it can't show a fault if it doesn't work! That said, it will fail for a missing airbag. As will the plank who had us fit a non-gen wheel to his Civic last week.

To be honest it didn't cross my mind about removing the airbag, looks like its back to the drawing board for that one! Would another fiat steering wheel fit mine? Its just that my steering wheel is a bit dated and i quite like the look of a few other puntos I've seen?

I swapped the standard punto steering wheel to the sporting one, it's an easy 10 minute job once you've disconnected the battery, just be super careful when taking the retaining bolt off when removing the old wheel and you'll be sorted.
