I should probably start by saying I know very little about cars.

I've just been replacing the spark plugs on my 2016 500X and that's easy enough... but I noticed what looks like an obvious bolt missing surrounded by oil next to coil pack 4.

Can you confirm if there should be one of the 10mm bolts in there? Plus any washer etc?

I tried one of the coil-retaining screws and it fitted perfectly.

Additionally... there was a small amount of oil on plugs 1&2... 3&4 seemed dry. How much if an issue is this?

Having now had a quick look... i'm thinking there doesn't need to be a bolt in that location.. and the oil is from the oil/air separator.

Is that an easy/cheap DIY replacement?

The thread looks clean, so there must have been a bolt in there sometime.. but I'm wondering whether it was holding a clip or bracket down?

I'd stick an M6 aka10mm bolt in there anyways.. just to close it off.

The oil is "mist" so it's not leaking from anywhere as such... but if you have a box, or pipes joined by clips in the vicinity, those would be the prime candidates. The grime is usually grimiest nearest the leak.
