Hopefully you have a new/to you X and I've understood correctly and not stating the obvious... ... but from memory the tyre pressure is a menu option.
If yours is now displaying the pressure on the TFT part of the screen and it never did before, could the tyre shop have just set the display to this screen, to check that it was all working fine.. but then left that option as the displayed option?
You would just need to cycle the menu to display whatever it was that was displayed before.
On my 500x (2016) the actual pressure isn't shown. There are no TPMS sensors on the wheels, and instead the cars computer monitors wheel rotation by ABS sensors. A tyre pressure out of normal will rotate at a slightly different speed and so the ECU will flag up a warning.
When you change ONE or MORE tyres on the 500X then it is best to have all the tyres checked and set to same/required pressures. The use the TPMS menu system to SET/RESET the TPMS threshold value.
As far as I know all EU/UK 500Xs use (as mentioned) the ABS system to monitor and not active pressure sensors in each wheel.

Well one reason the EU dictated TPMS was because people were not checking their tyres pressures every week as advised by EU / UK / Other.
I've seen many a car with an underinflated tyre and an accident waiting to happen.
I think we are all guilty of not checking tyre pressures weekly (with a gauge) but I think most of us at least do a visual inspection / kick the tyres Others just assume all is OK and drive on regardless.
Sadly, I am sure you are right.
What I find impressive is that the pressure reading I can see in the Hyundai I drive now tallies with my digital gauge, and the digital gauge on my electric pump. Modern transducers must be much better than the pen guages we all used to use!
