temp sensor or thermostat

right guys i know you will know the answer to this.
my temp gauge seems to be all over the place.
when i start from cold it warms up quickly then all of a sudden the needle drops back to half way between the middle and cold and then slowly rises again to the dot below the middle and then slowly goes down again the only time it goes above the dot and towards the middle and above is when its been iddling for ages and then the fan kicks in but it takes nearly 20 mins for it to do that even after driving 25 miles.
there is warm air coming into the car but gets cooler when the needle drops

so my thinking is the thermostat isnt working properly but not sure as it heats up fairly quickly
so what do you think???????????

Thermostat. If you reach the middle mark when stationary and the minute you start driving it starts to drop, the thermostat is shot.
